The minute I saw this Tomato Clementine Salad on Brown Vegan I itched to try it. There’s nothing special about it, but I guess that’s what made it so appealing. The simplicity of it made it seem exotic to me. I’m so used to salads being loaded with toppings, that this was a refreshing treat.
Okay, I’m not a huge fan of eating tomatoes alone. It has to go in a sandwich or stew or something for me (or be lost in a salad with a lot of other veggies), but I’m interested in expanding my vegan palate this time around. It’s very easy to get stuck in a vegan rut.
It was delicious!
I would recommend making this recipe in the summer when fresh farmer’s market tomatoes are available. You want quality, sweet tomatoes for this recipe. I also added a little salt to my salad. I can see myself making this again. Yum! Thanks Monique from Brown Vegan
